Mia’s Famous Lemon & Honey Salad Dressing

A recipe for a sweet and bright dressing that goes with almost any salad accoutrements. Some of my favourites are greens with goat cheese, chives, dried cranberries and bacon. Candied pecans, roasted beets, purple onion and avocado is delightful too. Add a protein to this and make it a meal. The combinations are endless!

I make a batch of this and store it in my refrigerator to dress my personal salads. For entertaining, one recipe will generously coat a large salad.

Lemon & Honey Salad Dressing

Lemon & Honey Salad Dressing

Ingredients

2 tbsp honey
1 1/2 tbsp dijon mustard
1 tbsp apple cider vinegar
2 tbsp red wine vinegar
1 tsp salt
1 tsp freshly ground pepper
1 clove of garlic grated on microplane
Juice of half a lemon
6 tbsp olive oil

Directions

  1. Coat your tablespoon in olive oil so that the honey slides off neatly. Add to a glass jar or microwavable dish.
  2. Microwave for 30 seconds so that the honey liquefies and incorporates easily into dressing.
  3. Add remaining ingredients including oil.
  4. Cover tightly with the lid of container and shake to emulsify.
  5. Serve immediately or store in the fridge for up to 2 weeks.
